Ingredients:
2 reg. size packages frozen peaches
1 reg. size package frozen blackberries
1 teaspoon vanilla extract
1 cup Splenda *this sweetener is best for baking*
3 tablespoons cornstarch
½ cup water
Non stick cooking spray
Topping:
1 ½ cups quick cooking oatmeal
¾ cup all purpose flour
1 stick butter, melted ( I use the real stuff but margarine can be substituted)
½ cup brown sugar (I use regular, there is very little carb in it)
½ teaspoon vanilla
Preheat oven to 350 degrees.
Put fruit and berries in a large pot on medium high heat, warm until fruit releases its juices and begins to boil softly, add splenda and vanilla and bring back to a boil. Meanwhile, make a slurry with the cornstarch and water and once the mixture comes to a boil add the slurry slowly until juice covers the back of a spoon. Set aside.
Spray a 13x9 inch baking dish with nonstick spray and put the fruit mixture into the pan, set aside.
For Topping, mix the oatmeal , flour and brown sugar thoroughly, add vanilla and melted butter, mix well until crumbly. Sprinkle over top of the fruit mixture.
Bake for 30 minutes or until crunchy on top and juice is bubbly.
Can be served warm or at room temperature, refrigerate left overs. Serves 6-8.
