Buckwheat Pancakes

- 1 cup buckwheat flour
- 1 teaspoon baking powder
- 2 tablespoons sugar
- 1 pinch salt
- 1 egg, beaten
- 1 cup milk
- 2 tablespoons melted butter
Preheat an electric griddle to 375 degrees F or a griddle on the stovetop over medium heat. Lightly grease the griddle. Mix the buckwheat flour, baking powder, sugar, and salt in a bowl. Mix lightly. Add the egg to the dry ingredients and mix well. Add the milk while stirring and mix until incorporated. Stir in the melted butter. Pour the buckwheat pancake batter by 1/4 cupfuls onto the hot griddle. Cook until bubbles form on the surface then carefully flip the pancakes over and cook for another 1 to 1 1/2 minutes or until browned on the bottom. Remove the pancakes to a plate and keep warm. Repeat with the remaining batter. Serve the buckwheat pancakes hot with your favorite toppings such as syrup, whipped cream, fruit sauce, etc.
