Banana Muffins

These Are The Easiest And The Best Tasting Muffins You'll Ever Find.....

Preheat oven 350° Prepare muffun tins with pan spray or you can use paper liners.
1 1/2 cup all-purpose flour
1 t baking soda
1 t baking powder
1/2 t salt
In a large bowl combine all ingredients and whisk together until well combined - and set aside.

3-4 lge banana's, mashed (and leave a few lumps)
1/2 - 1 cup sugar or splenda
1 egg or 2 egg whites, beaten
1/3 cup margarine, melted (or you can use applesauce instead)
1/2 cup walnuts or raisins, optional (you can use as much or as little as you want.)

In a medium sized bowl mash banana's and then, add the rest of the wet ingredients and stir just until combined.
Then, add wet mixture to the dry mixture - and stir just until all combined. (Batter maybe lumpy) Pour batter into prepared muffin tins. And bake 20 minutes or until they spring back when lightly touched on top or till done. Enjoy !
*If using applesauce instead of margarine - they will need to be kept in the fridge or they will not keep long.
