Easy Alfredo Sauce

- 1/2 cup salted butter, softened
- 8 ounces cream cheese, at room temperature (low fat: use low fat cream cheese or Neufchatel)
- 2 tablespoons flour (low fat: double the flour)
- 2 cups whole milk or half-and-half (low fat: use 1% or skim)
- 1/2 cup grated Parmesan cheese
- salt and pepper, to taste
Combine the butter and cream cheese in a bowl and beat with an electric mixer until well combined. Transfer to a saucepan. Place the pan over low heat and melt the mixture, stirring frequently. When the cream cheese is melted, slowly stir in the flour and milk and mix until blended. Heat, stirring constantly, until the sauce is smooth. Add the Parmesan, salt, and pepper. Remove the pan from the heat and let stand for a few minutes or until the cheese has melted. Stir then serve over your favorite pasta or use in another recipe. For the lower fat version, use the alternate ingredients listed. The sauce will be thinner at first but will thicken as it stands.
