11 oz Graham Craker Crumbs
4 oz Unsalted butter melted
Combine the Graham Cracker Crumbs and the melted butter. Press evenly over the bottom and side of the pan using your hand.
1 1/2 lb Cream Cheeese, at room temperature
1/2 lb Sugar, granulated
1 oz Cornstarch
1 TBSP Lemon zest, finely grated
2 tsp Vanilla extract
2 Eggs, at room temperature
4 Egg yolks, at room temperature
3 oz Sour Cream
Mix the Cream Cheese and Sugar together on a low speed, usig the paddle attachment until completely smooth. (Don't forget to scrap the paddle and the bowl during this state).
Mix in the Cornstarch, lemon zest, and vanilla. Mix until smooth, scraping down the sides andthe bottom of the bowl.
Add the eggs and egg yolks a few at a time, blending thoroughly after each addition.
Incorporate the sour cream.
Place the batter into the pan.
Place the cake pans inside hotel pans orother suitable pans, adding hot water around the pans to reach about halfway up the sides.
Bake at 50 degrees until set, approx. 50 minutes.
Cool completely, and then chill before removing the cake from the pan.
Decorate the cake with thin slices of fruit, serve fruit on the plate next to a slice of the cake, or serve the cheese cake with a thick fruit sauce such as Blueberry Sauce.
