Beer Cheese Soup

1 carrot
1 celery
4 garlic cloves
1/4 onion
4 strips bacon
5 bite size potatoes
2 bottles beer
1/2 cup cream
28 oz chicken broth
1 tbsp parsley
1/4 tsp cayenne pepper
2 bags (2 cup bags) sharp cheddar cheese
1 bag monterey jack cheddar
1/2 block buffalo cheddar (in the deli isle)
2 oz velvetta
saute garlic, onion, bacon in extra virgin olive oil until translucent.

Add carrots/celery/potatoes 3 minutes

add beer, broth, cream, bring to boil simmer 25 minutes add parsley and cayanne

add cheese simmer until melted
