- 1 small hot red chili pepper
- 1 habanero chili pepper
- 1 small jalapeno pepper
- 8 whole black peppercorns
- 1 cup canola oil
Preheat the oven to 300 degrees F. Cut the stems from the peppers. Slice the peppers in half and scrape out the seeds. Pour the oil into a 2-cup glass measure or other heat-safe container. Add the peppers and peppercorns to the oil. Place the container on a pie plate or in a baking dish. Place the dish in the oven and heat hot pepper oil at 300 degrees F for 2 hours. Ensure that the oil has reached 250 degrees F on a candy thermometer. Carefully remove the oil from the oven and let cool on a wire rack for 30 minutes. Place a coffee filter in a strainer. Strain the hot pepper oil through the coffee filter into a clean, glass jar and discard the solids. Cover the jar and store the oil in the refrigerator for up to 1 month.
