Adobo Pork Chops

Serves 4

4 - 3/4" to 1" thick boneless pork chops
1 large onion, cut in half and sliced
salt and pepper to taste
adobo to taste
olive oil
1 tbsp minced garlic

Directions:
1. Preheat your oven to 375 degrees
2. Season pork chops with salt, pepper and adobe.
3. Add just enough oil to your skillet/fry pan so that it's 1/2" deep
4. Add your pork chops to the skillet and fry for 5 minutes per side.
5. Remove from skillet and add to baking dish
6. Add onions and minced garlic to pan with leftover oil and cook until onions are soft.
7. Add onions, minced garlic and oil mixture to dish with the chops.
8. Bake at 375 degrees for 10 minutes, covered, internal temp should be 170 degrees.
9. Remove pan from oven and turn broiler on hi
10. Put dish back in oven, uncovered and broil for approximately 5 minutes per side
