Cornbread

Cornbread

1/2 t salt
2 t s baking powder
1 1/2 c cornmeal
2 T sugar
1 c canned creamed corn
1 c sour cream
2 lg eggs
1/2 c + 2 t veg oil

Position rack in center and preheat oven 400F.
Grease a 10" cast-iron skillet with 2t veg oil; heat in oven 15 min.
Whisk eggs in a bowl until frothy 1 min.
Add 1/2c veg oil and sour cream; whisk until combined.
Using a wooden spoon, stir corn into egg mix; set aside.
Sift cornmeal, sugar, baking powder, and salt into a bowl.
Stir wet into dry just until combined.
Remove skillet from oven.
Carefully pour batter into skillet.
Return to oven, bake until toothpick comes out clean 25 min.

Chi Chi's Sweet Corn Cake Recipe

1 c flour
1 c corn flour
1/4 c sugar
1/2 t baking powder
1/2 t salt
1 egg, beaten
1 c sour cream
1/3 c milk
1/4 c butter

Combine dry ingredients.
In another bowl, combine egg, sour cream, milk, and butter.
Stir wet into dry just until moistened.
Pour into greased 8" square baking pan.
Bake 400F 20-30 min until a toothpick comes out clean.
