Spanakopita

Yields: 30 small triangles are stuffed with feta and spinach.
You might also roll into cigar shapes or tied like knots.

1 1/2 lb spinach, coarsely chop
1 1/2 c feta cheese
1/2 c Parmigiano, grate
4 eggs, lightly beat
2 T mint
1/2 t ground nutmeg
20 sheets filo dough, thaw if frozen
8 T unsalted butter, melted and cooled
salt and freshly ground pepper, to taste

Heat a fry pan medium-high heat.
Add spinach with rinsing water clinging to leaves; cover, cook until wilted 1 min.
Drain well on paper towels, squeeze out liquid.
Place in a bowl, add crumbled feta, eggs, mint, and nutmeg. Stir to combine.
Season with salt and pepper.
Preheat oven 375F.
Lightly butter a baking sheet.
Cut filo sheets lengthwise into 3 equal strips.
Remove 1 strip, cover remaining with a slightly dampened towel to prevent drying.
Brush strip lightly with melted butter.
Place another strip on top of it; brush that 2nd strip with butter.
Place a teaspoonful of the filling 1" in from bottom of strip.
Fold uncovered end over filling on a diagonal to form a triangle.
Bring the bottom of triangle up against the straight edge.
Continue folding in this manner until a triangle pastry.
Brush lightly with melted butter. Place on sheet.
Bake 15 min.
Remove from oven transfer to a platter to serve hot.
