Chicken Avocado Melt

4 chicken breast halves (4 oz each)
1/3 c cornstarch
1 t ground cumin
1 t garlic powder
1 t salt
1/8 t cayenne pepper
1 egg
2 T water
1/2 c cornmeal
1/4 c veg oil
1 avocado, thinly sliced
2 c Monterey Jack cheese
sour cream, salsa and sliced green onions, optional
Flatten chicken 1/4" thickness.
Combine cornstarch, cumin, garlic powder, salt and cayenne.
In another shallow bowl, beat egg and water.
Dip chicken into egg, then roll in cornstarch mix then in cornmeal.
In a large skillet, cook in oil over med until golden brown on both sides.
Place in a greased 13x9" baking dish; arrange avocado evenly on top.
Bake, uncovered, 350F 10-15 min until chicken juices run clear.
Sprinkle with cheese. Serve with sour cream, salsa and green onions if desired.
