Pita Toast Strips

yields: 60 strips
6 white pita breads
6 T unsalted butter, soft
2 t parsley leaves
1/2 t minced garlic
1/4 t Emeril's essence
1 pinch salt
1 c Parmesan
Preheat the oven to 350 degrees F.
Finely grate the parmesan.
Cut each pita bread in half horizontally to make 2 rounds.
(There will be 12 total rounds.)
Cream butter with a wooden spoon. Add parsley, garlic, Essence, salt; mix well.
Spread 1.5 t mix across each pita round.
Sprinkle tops evenly with cheese.
Place rounds on a cutting board; use a pizza wheel, cut each into 5 strips.
Transfer to sheet; bake 8-10 min.
(The strips will continue to crisp as they cool.)
