Fondue for Adults

Three Cheese Fondue
2 c dry white wine
3 T flour
1 Ib Swiss cheeses, grated (Appenzeller, Raclette, and Cave Aged Gruyere or Emmentaler)
pinch of cayenne pepper
Linguica sausage, sauteed or grilled
Whole pearl onions, caramelized
Whole button mushrooms, sautéed
Fingerling potatoes, roasted
Fuji apples
crusty country bread
Bring wine to a boil in a fondue pot or small saucepan. Reduce liquid by 1/3.
Cthe cheeses with flour and cayenne.
Gradually add the cheese mix to the wine, stir constantly.
