Parmesan Puffs

Yields: 30

1/2 c milk
1/4 c butter
1/2 c flour
2 eggs
3/4 c parmesan
marinara sauce

Preheat oven 375F. Grease baking sheet.
Grate the Parmesan; set aside.
Heat milk and butter to boiling in saucepan.
Stir in flour; reduce heat to low.
Stir vigorously 1 min until mixture forms a ball; remove from heat.
Beat in eggs, one at a time, beating until smooth after each addition.
Stir in cheese.
Drop dough by rounded teaspoons 2" apart onto sheet.
Bake 15 min until puffed.
Serve warm with marinara sauce.
Variation: Add 1T fresh basil, oregano or parsley (or 1 teaspoon dried)
to the flour to create herbed puffs.

Can be prepared ahead.
Cool puffs, wrap tightly and freeze.
