Quiche Minis

yields: 2 doz

1/4 c chopped ham
2 pie crusts
1/2 c swiss cheese
1/3 c mayo + dash of sugar
2 T half and half
2 eggs, beaten
2 T green onion
1/2 t dry mustard

Preheat oven 425F.
On lightly floured surface, roll each pie crust to 12" circle.
Cut each pie crust into twelve circles using 2.5" biscuit cutter.
Place in lightly greased muffin pans.
Prick bottoms and sides with fork. Bake 10 min.
Remove from oven; reduce oven temp 350 F.
Mix all ingredients except ham until blended.
Spoon 1T cheese mix into each cup. Top evenly with ham.
Bake 25-30 min. Immediately remove from pan.
