Gruyère Herb Puffs
Category: Cheese
Yields: 2 dozen
4 T unsalted butter
1/2 c water
2/3 c flour
1/2 t salt
3 eggs, room temp
1 c shredded Gruyère cheese
1 T thyme leaves
1 t rosemary leaves
1 t Tabasco
Preheat oven 400F. Butter a baking sheet.
Cook butter and water over medium 3 min until boils.
Add flour and salt; stir vigorously with a wooden spoon.
Stir until it pulls away from sides of pan and forms a ball.
Remove from heat; let cool 3 min.
Mixer on med, beat in eggs one at a time, beat well after each addition.
The batter should have a dull sheen.
Stir in cheese, mined thyme and rosemary and Tobasco until well mixed.
Drop batter by rounded tablespoonfuls onto sheet, 2" apart.
Or pipe mounds of batter onto the sheet.
Bake 15 min.
Reduce oven temp 350F; bake 15 min more.
Transfer sheet to a wire rack; let cool.
Arrange puffs in a basket. Serve warm.
