Feta Cheese Parcels

the yield depends on how big you cut the pastry parcels. it's up to you on the size.
200 g feta cheese
2 T olive oil
1/2 c parsley leaves
1/2 pine nuts
4 spring onion
1/2 black pepper
1 puff pastry, thawed
2 T veg oil, for brushing
Preheat oven 220C
Toast pine in a dry pan on the hob.
Shred parsley into small pieces.
Shred spring onion as thin as you can.
Put cheese in a bowl and mash with a fork.
Add all ingredients; mix together.
Cut puff pastry with sharp knife into equal pieces.
Scoop cheese into pastry pieces, fold in half.
Press edges from all sides to make square shaped parcels.
Put on tray; brush top with oil.
Bake 10 min until golden.
Watch the pastry, to avoid over-cooking.
