Feta and Artichoke Galettes

500 g puff pastry sheets, thawed
1 jar artichokes hearts
1 pack of feta cheese
Few sprigs of thyme

Preheat oven 220C (200C fan assisted)
Roll out pastry in rectangle 9.5x8”
Use sharp knife to cut 30 squares.
Place on baking sheet.
Drain artichokes; cut each in half of thirds depending on size.
Crumble feta into medium sized pieces.
Brush each pastry square with beaten egg.
Place a piece of artichoke and some feta in each; sprinkle with thyme leaves.
Bake 10-12 min until cheese is just beginning to brown.
