Cheesy Grits Breakfast Casserole

4 servings (approximately 1/2 C each)

3 breakfast sausage links
1 Roma tomato
4 fresh basil leaves OR 1/4 t dried basil
1/2 t granulated garlic
3 white (button) mushrooms
3 eggs
1/4 t prepared horseradish
1/4 C sour cream
1 C water
1/4 C grits
1/2 C grated sharp cheddar cheese

Preheat oven to 375 degrees.

Cut sausage links in half, lengthwise, slice thinly (makes little half-moons), set aside. Coarsely chop tomato, set aside. De-stem & tear basil leaves, set aside. Thinly slice mushrooms, set aside.

Bring water to boil in small saucepan. Spray square (8x8) glass baking dish with non-stick cooking spray. Toss first five ingredients, spread in baking dish. When water boils, slowly add grits while stirring, turn off heat under saucepan. Beat together eggs, horseradish and sour cream; stir mixture into grits. Spread grits mixture over sausage mixture in baking dish; sprinkle with cheddar cheese. Bake in 375 degree oven for approximately 20-30 minutes or until set.

Cut into four servings, serve with toast, English muffin or biscuit.

Notes: I use turkey sausage and egg product (like egg beaters) to cut down on cholesterol. I use Roma tomatoes as there is generally less water.
