Nacho Casserole

Nacho Casserole - serves 8 to 10
2 T Corn Oil
1/2 C chopped onion (or 1-1/2 tblsp dried onion
1-1/2 T minced garlic
1/2 to 1 t chili powder
1/2 t ground cumin
1/2 t paprika
2 to 3 shakes Tabasco sauce (or 1 med. Chili pepper, chopped or 2 T Adobo paste)
1# Ground beef (I use ground turkey)
1 can black beans (drained & rinsed)
1 can diced tomatoes
1-1/2 C frozen corn (defrosted)
1 C prepared salsa
2 C shredded cheddar cheese (plus extra, to taste)
1 bag Tortilla chips (a BIG bag, I always run out before I finish layering!)
Preheat oven to 400 degrees
Heat oil in skillet; add onion, garlic, chili powder, cumin, paprika, Tabasco (or chili pepper or adobo) and cook gently, stirring occasionally, for 5 minutes or until soft but not browned. Crumble ground meat and cook thoroughly; add beans, tomatoes, corn, and salsa, stirring until heated through.
Crunch one-third of the tortilla chips in bottom of greased lasagna-type baking pan, layer with meat mixture, then sprinkle cheese. Add another layer in same order. Top with remaining tortilla chips and shredded cheese. Bake for 20 to 30 minutes, until the cheese has melted.
Serve with additional cheese and sour cream, if desired.
