Scalloped Potatoes w/ Ham & Cheese

3-3.5 lbs Ham 1/2-3/4" cubed (10-12 cups)
5 lbs Potatoes pealed and sliced thin
1.5 lbs Mushrooms sliced (fresh preferred)
2 lbs Cheddar or Colby Jack Cheese
3 cups Onion diced
1 Tbsp Seasoning salt
1/2 tsp Garlic Powder
1/2 tsp White Pepper
1 can Cream of Celery Soup (10.75oz)
3 cans Cream of Mushroom Soups (10.75oz)
1/2 cup Parmesan Cheese

In a large roasting pan combine ham, potatoes, mushrooms, cubed cheese and onion. Mix the rest of the ingredients in a bowl then stir into roaster. Cover and bake at 325deg stirring about every 1/2 hour for about 3 hours.
