2 cups flour
1 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/3 cup veg oil or butter
1 egg
1 can crush pineapple
1 cup coconut
Preheat oven to 350 degrees
Mix all ingredients until batter is lumpy
Use non-stick muffin pan or spray with pam baking spray.
Bake for 15 - 20 minutes
Yields 12 muffins or 24 mini muffins
