German Potato Salad NC

4 cups sliced, cooked red potatoes
6 slices bacon, cooked and crumbled, reserve grease
1/2 cup chopped onion
2 tablespoonfuls all-purpose flour
2 tablespoonfuls sugar
1-1/2 teaspoonfuls salt
1/2 cup vinegar (either white or cider- depending on preference)
1 teaspoonful celery seed
Parsley (optional)

1. Boil, cool, peel and slice potatoes
2. Cook onion in 1 tablespoonful bacon grease for 2 minutes
3. Stir in flour, sugar, and salt. Mix completely. Slowly stir in vinegar. Cook until just thickening.
4. Add potatoes and celery seed and mix thoroughly
Garnish with chopped parsley if desired
