Portobello Bruschetta

- 1 French baguette
- 1/2 cup olive oil
- 2 cloves garlic, peeled
- 4 ounces herbed goat cheese
- 2 large Portobello mushrooms, stemmed
- 2 grilled bell peppers, sliced thinly
- arugula leaves
Preheat grill. Brush mushrooms with olive oil and grill both sides until tender, 1 to 2 minutes. Cut baguette diagonally into 1/2-inch slices. Brush olive oil on both sides and grill about 30 seconds per side, until grill marks appear. Remove and rub one side with garlic clove. To assemble, spread goat cheese on slice, layer with a handful of arugula leaves, Portobello slices and roasted peppers.
