General Tso's Chicken

- 3/4 pound boneless chicken breast
- 2 teaspoons dark soy sauce
- 1 teaspoon finely chopped ginger
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil
- 1/3 cup cooking oil
- 2 dried red chiles cut in half lengthwise
***Seasoning***
- 1 tablespoon chopped fresh orange peel
- 1/2 teaspoon ground Sichuan peppercorns
- 2 teaspoons dark soy sauce
- 1/4 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon sesame oil
Cut the chicken into slices or cubes. Place in a bowl. Stir in the soy sauce, ginger, cornstarch, and sesame oil. Mix well, cover the bowl, and marinate the chicken in the refrigerator for 20 minutes. Heat the cooking oil in a wok or deep skillet over medium-high heat. Remove the chicken from the marinade with a slotted spoon, letting the excess marinade liquid drip off. Add the chicken to the wok and cook, stirring constantly, for 2 minutes or until the chicken has browned. Remove the chicken from the skillet with a slotted spoon and keep warm. Drain off all but 2 teaspoons of the grease left in the wok. Reheat the work over medium-high heat and add the dried chiles. Cook, stirring constantly, for 10 seconds. Return the chicken to the wok. Stir in the seasoning ingredients. Cook, stirring constantly, for 4 more minutes. Serve hot with steamed rice or Asian-style noodles.
