Wonderful Onion Soup

1-1/2 pound firm white onions, sliced
1 clove of garlic chopped finely
2 Tbs butter
1 cup White Wine
1 quart chicken broth
1 pint beef broth
1 tsp parsley flakes
1 tsp dried thyme
1 bay leaf
French bread
Sliced or shredded Swiss cheese

Saute onions on low heat in butter until onions are transparent and darkening for about an hour.
When ready, add about a cup of white wine and simmer on low for 10-15 minutes.
Add chicken and beef stock.
Add parsley, thyme, and bay leaf.
Bring to boil, reduce heat and simmer for 20 minutes.
Butter bread on one side and tear into bite size pieces and bake in oven until browned.
Ladle soup into bowl leaving room for bread and cheese.
Add bread to suit and top with a generous portion of cheese.
Place all bowls on oven rack 4 inches from broiler heat and broil until cheese melts. Serve at once.
