Hot Dirty Rice

Serves 6-8

2 - 12 Ounce Hot Sausage Rolls
1 Large Onion
6 Garlic Cloves
1/2 teaspoon Cumin
1/2 teaspoon All Spice
1/2 teaspoon Tumerric
1/2 cup Fresh Cilantro
1/2 teaspoon Crushed Red Pepper
1 Big Red Pepper
2 cups Long Grain Rice
4 cups Water
1/4 cup Olive Oil

Chop onion into small pieces and mince garlic together in a large frying pan with your sausage. Cook sausage on medium to high heat until it's done.

In a 7 Qt. pot cover the rice and water and cook on medium for about 15 - 20 minutes or until the rice is tender. Fluff with a fork and add the cumin, all spice, tumerric, crushed red pepper, and olive oil. Cut the red pepper into small cubes and add it to the rice. Once the meat is done and drained, combined it with the rice. Stir well and add the fresh cilantro, and salt and pepper to tastes.
