Dori's Chicken Enchilada Casserole

This will feed a large crowd- 10 to 12
Takes about 15 minutes prep time, and 25-30 minutes bake time. Feed a crowd in a hurry!
Ingredients: Tortilla chips- one 14-ounce bag,
One 24-ounce container of sour cream. One family size can of cream of chicken soup. One 4-ounce can of cooked boneless chicken (any brand) or used one cup precooked breast, or any precooked boneless chicken, One 16 ounce package of shredded cheese, white or yellow- whichever you prefer. To make it spicy- add one cup of peeled and diced green chili, (Anaheim's or New Mexico green chili works well), and a half cup of diced onions,if desired. I usually make two pans. One spicy with chilis and onions for my husband, and a larger pan that is mild for the children.
Instructions: Mix together sour cream, precooked boneless chicken, and cream of chicken soup in a bowl(If 'spicy' is desired, add the diced chilis and onion). If too thick, you can add a cup of water or milk to thin it. Once mixed together, then layer a cake or casserole rectangular pan with tortilla chips, then the mixture, then lightly with cheese, and continue layering until pan is filled, similarly to layering of lasagna. After you have finished layering, top with cheese, and put foil over the entire casserole. Bake in 350 degree F oven for 25, to 30 minutes, until casserole is completely heated through, and cheese is melted. Cut into sections and serve. May garnish with tomatoes, lettuce, and guacamole. I am a mom of nine, and this easily feeds the entire group when I am in a hurry.
