Banana Coconut Muffins

These are wonderful. The flavor is great. They are moist and cake like. You could use chocolate chips in place of the raisins.

1 2/3 cups flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup coconut
1/2 cup raisins
2 bananas, chopped
1 egg
1/2 cup milk
1/4 cup brown sugar
3 tablespoons margarine or butter, melted
Topping:
1/3 cup coconut
2 teaspoons brown sugar
2 tablespoons margarine
1/4 teaspoon cinnamon

Mix dry ingredients, including coconut and banana. Beat egg, add milk and
margarine. Add to dry ingredients, mix until moistened. Spoon into muffin
pans. Topping: Mix and sprinkle over unbaked muffins. Bake at 375 for 25
minutes.
