Stuffed Meatloaf

2 lbs ground beef chuck
1/2 cup leftover wild rice or 4 or 5 crackers
2 eggs
1/2 tsp to 3/4 tsp season salt, pepper & garlic powder (really to taste)

1lb of Velveta cheese

Mix first half of ingredients in large mixing bowl. My Mom likes this with the wild rice whereas my children think that's gross, so I usually make it with crackers. The seasoning I don't usually measure but I like things seasoned so it may be 3/4 tsp or more.

Place mixture in loaf pan. Scoop out the center of the loaf, leaving about 1/2" of meat mixture all around. Set aside the scooped out part. Cut your Velveta into chunks, place into hollow of loaf. Flatten the scooped out mixture into a lid for the loaf. Seal the loaf completely with meat mixture.

Cook at 375 for about 1 hour or until nicely browned. Drain grease at halfway point. (you can wait until the end but you might loose some cheese)

Serve

Feeds my family of 4. We like it with mashed potatoes & corn & a salad
