Serves/Makes: 6
Ready in: 30-60 minutes
- 1 pound ground beef
- 1 can (16 ounce size) pork and beans
- 1/2 cup barbecue sauce
- 1 can (12 ounce size) refrigerated biscuit dough
- 3/4 cup shredded cheddar cheese
Preheat oven to 350 degrees F. In a large skillet, brown the ground beef until no longer pink. Drain off any fat. Stir in the pork and beans and barbecue sauce. Cook until bubbly. Place the beef and bean mixture in a 2 1/2 quart casserole dish (rectangular shape works best). Unwrap the refrigerated biscuit dough and separate into individual biscuits. Place the biscuits on top of the beef mixture in a single layer covering as much of the casserole as possible. Bake the casserole at 350 degrees F until the biscuits are just starting to turn golden brown and the meat and bean mixture is starting to bubble (about 15 minutes). Remove the casserole from the oven. Top the biscuits with the shredded cheese and return to the oven for another 5-10 minutes or until the cheese is melted.
