Bacon Onion Marmalade

Yield: Serves 4

RECIPE

INGREDIENTS
Onion Marmalade:

2 slices pancetta, 2 oz each, or
1/4 lb thickly sliced bacon
1/4 cup olive oil
2 large white onions, thinly sliced
1/2 cup balsamic vinegar
1/4 cup sherry vinegar
1/2 cup water
1 teaspoon salt
1/4 teaspoon ground white pepper
2 teaspoons sugar
1/2 teaspoon cayenne pepper



DIRECTIONS
FOR MARMALADE: First unroll the pancetta, if using. Cut the pancetta or bacon crosswise into strips 1/2 inch thick.


In a sauté pan over high heat, warm the 1/4 cup olive oil. Add the pancetta or bacon and sauté until slightly crisp, about 2 minutes. Add the sliced onions and continue to sauté until the onions are golden brown, about 10 minutes.


Stir in the balsamic vinegar, sherry vinegar, water, salt, white pepper, the sugar and cayenne. Bring to a boil over medium heat, then continue to boil until the liquid evaporates completely, 12-15 minutes.


About 5 minutes before the marmalade is ready
