Cucumber Salsa

Cucumber Salsa

Dice or chop the following to your desired consistency

1 medium sized cucumber
2 cans of Rotel (original, mild, whatever you like)
l/2 large onion
fresh cilantro(optional)

Mix with the above
l/4 cup vinegar
1 packet Fiesta Ranch dressing powder
Refrigerate for minimum of 1 hr.

Variations:
Substitute fresh tomato for a can of Rotel (which is what I did so it wasn't so runny)
Add 2 jalapenos
Add green peppers
More cucumber or tomatoes as desired (I added a little more cucumber)
