EVER LOVIN CHICKEN
1/2 cup butter or margarine, softened
1 1/2 Tbsp. Tarragon leaves
1/4 cup chopped onion
1 cup dry vermouth
1/3 cup flour
1 chicken, cut in serving pieces
3/4 tsp. Lemon pepper seasoning
1 Tbsp. Grated Parmesan cheese
1 Tbsp. Grated Orange Peel
Mix butter and tarragon in small bowl. Chill. Divide in half. Spread half in the bottom of large, shallow baking pan. Save remainder. Sprinkle onion evenly over butter mixture. Add vermouth. Place flour in shallow dish and dredge chicken to coat. Note: I add some salt to the dredge. Place chicken, skin side up in pan.
Dot with reserved butter mixture. Sprinkle with lemon pepper seasoning. Bake, uncovered at 350 degrees about 40 minutes or until brown and fork can be inserted with ease. Put on platter and sprinkle with Parmesan and orange peel. Serve pan gravy on the side.
