Zucchini Cakes


I got this recipe from a friend; we had these for dinner tonight, and we all liked them. It's a way to use up your zucchini.

2 eggs beaten
2 Cups grated and drained zucchini
1 Tbsp. grated onion
1 Tbsp. Mayo
1 tsp. Old Bay seasoning
1 Cup Bread crumbs
flour and oil

Conbine all in a bowl and mix well. Shape into patties, pat w/ flour and fry in a skillet until brown.
