BBQ Cedar Plank Salmon

Ingredients:
4 8-oz wild sockeye salmon fillets (leave skin on)

Crust Mix:
2 Tbsp olive oil
½ cup chopped fresh dill
1 Tbsp black pepper
Salt to taste
3 Tbsp maple syrup
1 lemon

Method:
Soak cedar planks in water for 4 to 6 hours, preheat barbeque to high.

Rub salmon with olive oil. Sprinkle with dill, pepper and salt. Brush with
maple syrup.

Place skin side down on the cedar planks. Grill salmon on BBQ with lid
down about 12 to 15 minutes checking planks periodically to make sure they don't burn.

Finish with a squeeze of lemon and a nice glass of Chardonnay or Pinot Noir for red wine
