INGREDIENTS

1 lb ground beef
1 small yellow onion, chopped
8 oz tomato sauce (canned)
15 oz diced tomatoes, no salt
15 oz light kidney beans
1 package(s) taco seasoning
1 tsp chili powder
1 1/3 cup(s) white rice (instant)
1 bag tortilla chips

1. Brown beef in skillet with onion and season with a little pepper.

2. Transfer beef with a slotted spoon to a 3 qt casserole dish. Add taco seasoning, chili powder, tomato sauce, tomatoes and kidney beans (not drained). Microwave on high for 6 to 8 minutes (until bubbly hot), stirring midway through cooking.

3. Stir rice into hot mixture.

4. Cover and let stand 10 minutes (for rice to absorb liquid).

5. Serve with nacho chips. Optional - sprinkle with shredded cheddar or Mexican cheese blend before serving.
