Spicy Pork Chops with Mango Lime Salsa

INGREDIENTS

1 mango, diced
2 plum roma tomatoes, diced
1/4 cup(s) red onion, diced
2 green onion(s), thinly sliced
1/4 cup(s) fresh cilantro, coarsely chopped
1/4 cup(s) orange juice (fresh)
2 tbsp lime juice (fresh)
1/2 tsp tabasco sauce
1 tsp peanut oil
4 thick pork chops, with bone
2 tbsp olive oil
2 tbsp jerk seasoning

1. Salsa - Combine mango, tomatoes, onion (red and green), cilantro, orange juice, lime juice and tabasco. Toss gently, season with salt and pepper and drizzle with peanut oil. Toss again and chill.
2. Pat the pork chops dry and rub jerk seasoning (or some type of blackened seasoning) evenly on each side.
3. Heat 2 tbsp olive oil in a large skillet over med-high heat. Cook chops (don't crowd them in the pan) for 5 minutes on one side and 4 minutes on the other side or until well browned with just a hint of pinkness inside. Turn down heat if they start to get too brown and are not cooked through (add more olive oil if needed while cooking).
4. Keep warm and let sit for 3 - 5 minutes before serving with salsa on top.

Note: Thick chops (1 1/4 inch - 1 1/2 inch) work the best!
