Cabbage Rolls Stuffed

Stan's Cabbage Rolls
Ingredients
2 lbs. ground chuck
1 lb. ground pork
2 med. onions, chopped
3 cloves garlic, chopped
2 lb. regular long grain rice, (not parboiled, converted, or short grain )
1 tsp. pickling salt
1/4 tsp. fresh ground pepper 6 strips smoked bacon
caraway seeds as needed
1 liter wine sauerkraut
20 oz. can tomatoes
20 oz. can tomato juice
13 oz. can tomato sauce
2 green peppers, cut into strips
2 large winter cabbage
Preparation
Fry bacon until extra crisp. Crumble up into small pieces. Leave in pan with bacon fat. Add ground chuck & ground pork to pan. Sauté until meat is a nice gray color. Add onions, garlic, & ground pepper. Sauté for about 5 minutes. Dump mixture into the top of the roasting . Mix with canned tomatoes & tomato juice. Mix this well. Fill a 6 qt. pot, 3/4 full of water. Add pickling salt. Bring to a rolling boil. Add rice. Return to a boil, with lid off. Simmer & stir occasionally, until rice is adante'. Drain water, do not rinse rice. Add rice to meat mixture. Mix well. is adante'. Drain water, do not rinse rice. Add rice to meat mixture. Mix well. Cut the core out of the cabbage, about 6-7 inch tapered hole. Put in a large pot with 1 1/2 inch water, core side down & simmer with lid on. After about 7 minutes, using 2 forks, peel off the leaves as they will come, & remove leaves from pot. Put the lid back on & repeat over and over until cabbage has very little leaves left. Put them on a plate to cool. Do the same to the other cabbage, then take a sharp paring knife & peel the back strip off the back of the cabbage leaves on the plate. Using the very outer green leaves, line the bottom of the roasting pan. Sprinkle the cut off strips on the bottom too. Have the leaves lapping up the sides of the pan. Lay a cabbage leaf flat, & put some meat mixture in it ,along with a strip of green pepper. Roll it up & place in bottom of roaster. Keep doing this until the bottom is lined full. Sprinkle some caraway seeds on them & sprinkle sauerkraut & some juice on top. Start a second roll, & do the same thing. Then a third. If you have enough, make a fourth layer. Use the whole jar of sauerkraut & juice. Then pour the whole can of tomato sauce over the top. Cover the top with more leaves, to prevent burning. Tuck leaves down the sides too. Put on the roasting pan cover, & put in a preheated 350° oven for 30 minutes, then turn down to 325° for 3 hours.
