Zuppa Tuscan Soup Olive Garden copycat

Ingredients
1 lb. Italian Sausage
2 Large Russett Baking Potatoes, slice in 1/2 then thinly
1 Large onion diced
½ c. Bacon bits, slice & fry or use Hormel bacon bits
2 cloves Garlic, minced
2 c. Kale or swiss chard, chopped (can use arugula)
2 cans Chicken broth
1 Qt. water
1 c. Heavy whipping cream
Preparation
1. Cook sausage in same pot you will use for soup. Drain off grease
2. Add onions, potatoes, garlic, chicken broth & water.
3. Cook on medium heat until potatoes are done..
4. Add sausage, bacon, salt & pepper to taste.
5. Simmer for another 10 minutes.
6. Turn heat to low and add greens and cream.
7. Heat through and serve.
