Pineapple Casserole 2
Category: Recipes
Ingredients:
2 (20 oz.) cans of crushed pineapple, drained
5 tbs flour
1/2 cup sugar
1 cup (8 oz.) grated sharp cheddar cheese
1 package/tube of whole wheat Ritz crackers
1 stick of butter
Directions
Start the oven at 350 degrees.
Drain the pineapple. Use a sieve to drain the pineapple. Put the sieve over a container of some sort, dump in the pineapple, and mush it with a spoon to drain thoroughly. Reserve the juice for something else.
Take a 12 x 8 inch glass casserole dish and spray Pam on the inside of it. Dump the drained crushed pineapple into the casserole dish and shake it from side-to-side to distribute the pineapple evenly.
Grate the cheese into a container.
Mix the flour and sugar together, and dump into the container with the grated cheese and mix together.
Pour this cheese/flour/sugar mixture onto the top of the crushed pineapple.
Next, you need to crush the Ritz crackers. To do this, put the crackers into a plastic bag and crush them with the use of a rolling pin. Leave them crushed, but not too finely ground. Evenly distribute the Ritz crackers on top of the other ingredients in the casserole dish.
Melt the butter (I use a microwave and pyrex dish) and drizzle the butter on top of everything in the casserole dish.
Place the casserole dish in the middle or upper rack of your oven. Set the timer for thirty minutes and relax.
This dish can be served warm or cold. Wonderful.
