Mango BBQ Sauce

MANGO BBQ SAUCE

2 cups water
3/4 cup corn syrup
1/2 cup tomato paste
1/2 cup vinegar
3 tablespoons molasses
1/2 cup + 3 tablespoons brown sugar
1 teaspoon liquid smoke
1 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/8 teaspoon paprika
1/8 teaspoon garlic
3 large ripe tomatoes
1 large sweet onion, (Vidalia, if in season) - cut in thick slices
2 or 3 very ripe mangos, depending on size, peeled and diced
1/2 cup cider vinegar

Combine first 12 ingredients in a medium saucepan over high heat and whisk until smooth. Bring mixture to a boil, then reduce heat and simmer for about 45 minutes or until mixture is thick.

While the mixture is simmering, Grill tomatoes and onion, charring on all sides until soft. Allow them to cool slightly, then chop. Place in the saucepan, adding the remainder of the other ingredients and simmer for an additional 30 minutes.

Allow to cool, then place into a blender and puree. Strain well.


Cool then store in a covered container in the refrigerator overnight so that flavors can develop.
