PINA COLADA CAKE


3 1/2 CUP UNCOOKED OLD FASHIONED OATS
2 TSP BAKING POWDER
1 ( 3 OZ) PKG FF SF INSTANT VANILLA PUDDING MIX
1/2 CUP UNSWEETENED APPLESAUCE
2 EGG WHITES
1/4 CUP EGG SUBSTITUTE
3/4 CUP SPLENDA SUGAR SUBSTITURE
2 CUPS NONFAT MILK
2 TSP COCONUT EXTRACT
2 TSP RUM EXTRACT
2 MEDIUM VERY RIPE BANANAS, MASHED
1 ( 20 OZ) CAN UNSWEETENED PINEAPPLE TIDBITS, DRAINED

PREHEAT THE OVEN TO 400 F. COAT A 9X13 INCH BAKING PAN WITH COOKING SPRAY.

IN A MEDIUM BOWL, STIR TOGETHER THE OATS, BAKING POWDER AND PUDDING MIX.

IN A LG BOWL, MIX APPLESAUCE, EGGS AND SPLENDA. ADD THE MILK AND EXTRACTS.

ADD DRY INGREDIENTS TO THE WET, MIXING WELL. FOLD IN DRAINED PINEAPPLE.

POUR THE MIXTURE INTO THE PREPARED PAN AND LET IT SIT FOR ABOUT 20 MINUTES.

BAKE APPROXIMATELY 45-55 MINUTES, UNTIL THE MIDDLE IS BAKED FIRM.

LET COOL BEFORE FREEZING. FREEZE ANY LEFTOVER ON THE SECOND AY.
IT SPOILS FAST.
