Ingredients

200 grams shrimp, shelled and deveived
1 stalk lemongrass, cut lengthways
1 piece galangal, thinly sliced
3 kaffir lime leaves, shredded
1 tbsp chilies, coarsely pounded
70 gram straw mushrooms, halved
2 tbsp coriander leaves
1 1/2 cups stock

Seasoning

2 tbsp fish sauce
2 tbsp lemon juice


Preparation

Bring the stock to the boil, add the shrimp.
Add the mushrooms, lemongrass, galangal and kaffir lime leaves into the boiling stock for 5 minutes. Add the seasoning and chilies.
