Pour 2 T of EVOO in large skillet
Add 3 T of chopped garlic and slice of ham, pancetta, smoked turkey OR bacon and cook until meat is slightly crispy
Add one large bag of fresh kale and cook covered about 15 minutes until wilted.
Serve in large bowls with a sprinkle of romano cheese and slice of french bread if desired.
