4 cups unpeeled chopped zucchini
1/4 cup chopped onion
1 small box cornbread mix
1/2 t salt
1 egg
1/2 cup grated cheddar cheese
Another 1/2 cup for topping
Preheat oven 325
Combine first 6 ingredients
Pour into greased 8" pan
Bake 45 minutes
Sprinkle on extra cheese and bake another 15 minutes
