Indian Summer Corn Salad

1/4 c red wine vinegar
1 T evoo
1/2 t ground pepper
1/2 t basil
1 clove minced garlic
3 Cups corn kernels
2 firm tomatoes chopped
1 cup chopped sweet onion
1 green pepper chopped
1/4 cup chopped cilantro
Mix all of above together

Line large bowl with 6 cups baby spinach, pour corn mixture into bowl and toss!
