Oatmeal Raisin with Cocoa

Oatmeal Raisin Cookies with Cocoa

24 cookies

•100 grams all-purpose flour
•15 grams unsweetened cocoa powder
•3 grams baking soda
•2 grams salt
•100 grams butter, softened
•100 grams packed brown sugar
•1 egg
•3 ml vanilla extract
•120 grams rolled oats
•60 grams raisins


Preheat oven to 180 degrees C.
Beat butter and sugar until creamy and fluffy. Add egg and vanilla; beat well. Sift together the flour, cocoa powder, baking soda, saltand stir into butter mixture and mix well. Stir in oats and raisins.
Drop prepared dough by rounded tablespoonfuls onto ungreased baking sheets. Bake 10 to 12 minutes, until biscuits are almost set. Do not over bake. Cool baking sheets for a few mins, then transfer cookies on wire racks to cool completely.
Store in airtight jars to last about a week in cool temperatures. Cookies can also be frozen and last for about 3 months.
