Onion relish

Category: For good health

3 small yellow onions, sliced thin and separated into rings
1 small red onion, sliced thin and separated into rings
2 Tbsp sugar
1 Tbsp balsamic or cider vinegar
1 Tbsp white vinegar
2 tsp Dijon or spicy brown mustard
1/8 tsp black pepper

Place all the ingredients in a small glass bowl. Cover and let stand at room temperature at least 30 minutes before serving. Or chill in the refrigerator overnight. Serve with grilled meats. Store tightly covered in the refrigerated for up to 1 week. Makes about 2 cups.
