Pumpkin pie

10 cups pumpkin puree
16 eggs
6 cups brown sugar, firmly packed
6 2/3 cup pet milk
4 tsp ground ginger
8 tsp cinnamon
1/2 tsp mace
8 Tbsp boiling water
1 cup frozen orange juice
4 tsp salt
7 unbaked pie shells
Turn pumpkin into a thick bottomed pot and stir over direct heat until pumpkin is somewhat dried out and has a slightly caramelized appearance (about 10 minutes.) Beat eggs in mixing bowl, blend in sugar; add evaporated milk and spices which have been mixed to a paste with the boiling water. Stir well. Add pumpkin, orange juice and salt; stir thoroughly.
Pour into the unbaked pastry shells. Bake at 450 F for about 15 minutes until pastry edges are lightly browned. Then reduce heat to 300 F and continue baking until only an inch circle in center remains liquid, about 45 minutes. Remove and cool before cutting. Family Size 1/2 recipe
